Special Episode: Thijs Bosch - The Protein Brewery

·28 min·1 clip
Preliminary research suggests Fermatain may induce GLP-1 production in the human body.
Thijs Bosch is the recently appointed CEO of The Protein Brewery. He joined the company three months earlier and says the 30 million euro Series B is a turning point. The raise is meant to grow the business and make more impact. The interview focuses on the company's fungi-based protein platform and its product. Bosch is clear that the product is not a simple drop-in ingredient. He explains that real application work is usually needed before it can fit into a product. That is why the company pairs the product with technical services and application support. The conversation then moves to the Meckenbruck facility. Bosch describes it as a demonstration factory rather than a true full-scale plant. It can produce hundreds of tons of ingredient, but its job is to prove the process. The team still has to validate cost efficiency. They also need to show that a larger factory makes sense. Sugar conversion remains one of the important process questions. Product consistency is another. Bosch says the team is still learning what the product can actually do in end applications. That learning only happens once the tanks are running. He notes that fermentation behaves differently at 90-cube scale than it does in five- or ten-liter vessels. The interview keeps coming back to the gap between technical promise and commercial reality. Bosch treats that gap as central to scaling alternative proteins. He closes with advice for other food-tech founders. They should be very clear about the market segment they want to serve. They should also be sharp about their value proposition and look first for the niche where the ingredient is hardest to beat. The last point is choosing the right launch customers. For Bosch, that focus is what turns a promising ingredient into something that can matter at bigger scale.
